"Garbage" Pizza

In accordance with New Year's resolution #5, "I will make things from scratch", and also with New Year's resolution #1, "I will reduce waste in my kitchen", I bring you "garbage" pizza.

I've been reading other peoples' New Year's resolutions a lot lately and have also been inspired by someone saying that they wouldn't go out to eat if there was food in the fridge.  Tonight, I was tempted.  I fermented and cooked all day, and, frankly, I didn't really feel like doing anything else.  When I opened my fridge, though, I couldn't deny the fact that I had a lot of good food that was slowly getting... bad.

I opened my freezer and found some tomatoes that I had cooked down a couple of months ago.  Then I saw the bag of spinach in my crisper that was looking a little wilted.  I saw capers and I saw an onion.  I thought... pizza.

My dreams of fresh-baked pizza were almost dashed with the realization that I had no yeast for dough.  Luckily I came across this great yeast free recipe at Cooks.com.

CRUST:
2 c. flour
1 tsp. salt
2 tsp. baking powder
2/3 c. water
1/4 c. vegetable oil

PIZZA TOPPING:
1 c. tomatoes
4 garlic cloves
10 oregano leaves
1 1/2 c. cheese
1/2 red onion, sliced thin
1 Tbsp. capers
1 c. spinach

Here's what you should do:

Soften some garlic in olive oil and cook the tomatoes down further, to the consistency of pizza sauce.  Throw in some oregano for flavor.  Let cool.

Shred whatever cheese you have in the house.  I think in my case, it was some smoked Jarlsberg and Cabot cheddar.

Slice some red onions thin, blanch and chop some spinach.  To blanch spinach, throw it into salted, boiling water for 30 seconds, then run it under cold water.  Squeeze the excess water out and it won't end up on the surface of your pizza.

Shape the pizza dough into a circle, then spread the pizza sauce to the edges.  Sprinkle the cheese on.

Arrange the onions, spinach, and capers.  Bake at 425 for 15 minutes.

Ladies and gentlemen, this recipe was really easy and it allowed me to use up food that had just been sitting in my fridge.  I just wish I had some meat laying around..  What's the weirdest "garbage" food you've ever made (that was edible)?
